If last year we were seeking for extra virgin olive oil all over Italy and expecially Tuscany, where the yield was lower than 30%, if not yet none, this year the harvest has been gorgeous. Olive trees were bulging with fleshy olives and the groves started to pour their harvest early in mid-September. That is the time when Marco, one of the experts in the Versilia area and olive-mill manager, started his work. The outcome is a grassy, fresh and balanced hemerald gold, which is heaven on the bruschetta or pinzimonio. The work at the olive oil mill starts early in the morning andd finishes late at night, when the last crops are discarded in the press. Many producers will book their own turn early in advance in order to be the first to switch on the machines in the morning, so that their fruits do not mix wih other farmers’ones. This is very important for the quality of the extra virgin olive oil, where just a few bad olives can ruin a whole harvest. However, Marco is very attentive to check the quality of products, as none of the bottles coming out of his mill can be considered poor. The best time to visit Marco’s olive oil mill, or frantoio, is by the end of September to the end of November, to be able to see the machines in action and taste olive oil directly from the tube. I also recommend purchasing olive oil from producers who have their own mill, as they can guarantee the quality of the fruits and process, such as Fontanaro farm in Umbria or Fattoria di Maiano near Florence.
