#SpazioMediterraneo – Lucca foody event in Milan
In the past three days I have attended a food show in Milan financed under a European project and partnered by the Tuscany, Sardinia and Liguria regions. Not only their top typical food, but also food artisans and chefs who have enjoyed the selected bunch of participants with their show cookings.
Among participants, my friend and food expert, Andrea Bertucci of Osteria Vecchio Mulino in Castelnuovo Garfagnana. Not only he is acknowledged about most of Slowfood and typical productions all over Italy, but he also knows most of their producers. We have enjoyed him telling stories about biroldo, mortadella, mondiola and ‘Tizzone’, while slicing and cutting…
‘Tizzone’ di Giustagnana, the one and only cured under ash…which was known in the past to be the most effective cleansing…Laudry was brushed hard with water ans hashes. Giustagnana is a tiny village on top of Versilia on the Apuan Alps. After a short winding driving, we can reach for the production workshop, which still today keep this tradition available to our taste ande memory.
